In an HPP factory, the range of pressure used is between 400 MPa (58000 psi) and 600MPa (87000 psi). This technology applies to fruits and vegetables juices and smoothies to give them a longer shelf life while preserving the original nutrients, flavors, and texture. Unlike thermal treatments that chemically alter food at high temperatures, HPP breaks or creates weak bonds on macromolecules without altering the food nutritional quality or significantly reducing enzymatic activities. To minimize enzymatic changes caused by microorganism growth, cold storage is essential for beverages made with HPP.<\/p>\n\n\t\t<\/div>\n\t<\/div>\n
