HIGH PRESSURE PROCESSING | HPP
In an HPP factory, the range of pressure used is between 400 MPa (58000 psi) and 600MPa (87000 psi). This technology applies to fruits and vegetables juices and smoothies to give them a longer shelf life while preserving the original nutrients, flavors, and texture. Unlike thermal treatments that chemically alter food at high temperatures, HPP breaks or creates weak bonds on macromolecules without altering the food nutritional quality or significantly reducing enzymatic activities. To minimize enzymatic changes caused by microorganism growth, cold storage is essential for beverages made with HPP.
PRODUCTION PROCESS
1-Receiving the Fruits
The first step in the production process of our factory is the receiving of fruits. This crucial step takes place in the receiving area, which is the most important part of our factory.
2-Hygiene Quality Control
From raw materials to finished products, Signature employs certified and documented food safety management systems and good manufacturing practices at all stages of production to ensure the most rigorous standards of hygiene and the highest quality of production conditions, as well as improving production flow and individual processing steps.

2-Hygiene Quality Control
From raw materials to finished products, Signature employs certified and documented food safety management systems and good manufacturing practices at all stages of production to ensure the most rigorous standards of hygiene and the highest quality of production conditions, as well as improving production flow and individual processing steps.
3-Washing
Fruits undergo a thorough cleaning process using an automatic washing system that utilizes water and pumped air (for tropical fruits) to ensure optimum levels of hygiene and safety.
4-Final Sorting
Cold-pressed juices utilizing “belt press” machine: Having ensured the quality and cleanliness of the selected fruits, the extraction process begins. Peels, stones, seeds, fibers, and any foreign bodies are removed to extract smooth, pure and pulpy juice. Juice temperature will be maintained below 10 ̊C throughout the process No heating. Conserve nutritional characteristics of juice.
3-Washing
Fruits undergo a thorough cleaning process using an automatic washing system that utilizes water and pumped air (for tropical fruits) to ensure optimum levels of hygiene and safety.
4-Final Sorting

5-Cold Press

6-Filling and Bottling
After extraction, juices can be filled in flexible pillow bagsand pouches from 1 to 5L. Each pouch is labeled by product name, batch number, production date, expiry date and net weight. Juices can be filled in PET bottles as well, offering different shapes and volumes with possibility of private labeling.
